This is one of my favorite things to take to a potluck. I had gotten the recipe off one of those Publix Apron recipes years ago and it has become one of my go to recipes.

I love how easy and colorful it is.
- 1 box of frozen corn..defrost and drain and put in bowl.
- cut up 4 green onions and add to corn
- Rinse and drain 1.5 ounce can of black beans and add to corn
- Add one and a half cups of diced tomatoes a half cup of mojo marinade and 1 tablespoon of honey…that’s it…it’s that easy…and people love it.
If we have leftovers I add cut up cooked chicken and put it over brown rice for another easy dinner recipe.

I had this or something similar at the church potluck yesterday and thought it was out of this world. I googled mojo marinade and came up with many, many different ones – what is yours?? Thanks!!
I just use whatever I find…this time I used Goya
